Welcome to Central Coast Distillery - Founded in 2017 by Eric and Anna Olson, we are the creators of the Forager spirit brand—an international award-winning portfolio shaped by a disciplined culinary pedigree and Eric’s training across 22 countries.We distill in ultra-small batches of only 36 to 60 bottles, trading volume for microscopic precision and refined craftsmanship.

At Central Coast Distillery, our craft is guided by a three-part harmony we call The Triad. It begins with The Foundation: our spirits, distilled with the microscopic precision and "clean-cut" purity of our Fitzell family ancestors. This is followed by The Enhancement: intentional, seasonal cocktails that allow our rare spirits to collaborate with the peak flavors of our local fields and orchards. The journey reaches The Completion at the table, where locally sourced bites from Morro Bay and Central Coast ranches recreate the memories of our adventurous travels. Together, these elements form a sensory map of our history, our region, and our global inspirations—designed for the pure pleasure of your enjoyment.
The Foundation: Our Spirits
The Forager name is a tribute to Eric’s ancestors, who served as California’s first druggists in the late 1800s and foraged for medicinal purposes. Today, we honor that heritage of purity by distilling in ultra-small batches of 36 to 60 bottles.
The Enhancement: Our Cocktails
A cocktail should be an expression of time and place. Using herbs from nearby fields, fruits from sun-drenched orchards, and house-made shrubs at the peak of their season, we craft drinks that mirror the balance of nature.
The Completion – Our Bites
Many of our dishes are drawn from a deep memory—meals Eric and Anna have enjoyed during their adventurous travels, reimagined to be shared here with you. It is the final piece of the triad, designed to ground your experience and complete the journey from the still to the table.
